I have to share a recipe.

And I know what you’re thinking right now. The exact same thing I would be thinking if someone had a blog post titled with the word “meatloaf:” Yuck. (I actually tried to think of a different name for it, but I’m not creative enough.)

Yeah, meatloaf has never been up there on my list of foods I like. Just the name itself sounds bad. But when I was starving at a preschool potluck gathering last year I tried some. It smelled so good I couldn’t resist. AND, it had the recipe all typed up sitting right by it. Had to eat it. Had to get the recipe. It was delicious.

So, the other day I was going through my recipes trying to figure out dinner, I found this one stuffed somewhere in the wrong section. I had to make it. And we devoured it. (Thank you to whoever the McDaniel Family is who brought this tasty little number to the potluck!)

So, here it is…happy meatloaf eating!

1 c. brown sugar
1 c. ketchup
3 tbs. Worcestershire
1 1/2 pounds lean ground beef
1/2 c. milk
3/4 c. finely crushed saltine cracker crumbs
2 eggs
1 1/2 tsp. salt
1/4 tsp. ground black pepper
1/4 tsp ground ginger
1 envelope onion soup mix
garlic for taste

Directions:

Preheat oven to 350. Lightly grease a 9×5 inch loaf pan.

Mix brown sugar, ketchup, and 2 tbs. Worcestershire sauce in a separate, small mixing bowl.

Pour half of the brown sugar and ketchup mix into the bottom of the loaf pan.

In a large mixing bowl, mix remaining ingredients and shape into a loaf. Place on top of the brown sugar/ketchup mixture

Pour the remaining brown sugar and ketchup mix on top of the loaf.

Bake in preheated oven for 1 hour or until juices are clear.

So, there you go. Take it or leave it. It is meatloaf. But man, it’s good.
