This is another one from my sis-in-law Julie (who is just about to have her first baby…hooray!)
Being an Indian food fan (we’ve had to do “India Night” a couple times for “International Nights” cause I like it so much…), I was head-over-heels with this stuff.
Combine all marinade ingredients, then pour over chicken and refrigerate for at least an hour.
Grill or cook chicken and discard marinade.
Then use these ingredients for the sauce:
Melt the butter in a large skillet over medium heat. Saute garlic and jalapeno for one minute. If you would like, have the extra children over at your house during dinner-prep-time have a jalapeno-eating-contest while you work…makes cooking fun 🙂
Season with the cumin, paprika and salt.
Stir in tomato sauce and cream. (Julie sometimes uses more tomato and less cream…)
Simmer on low until sauce thickens (about 20 minutes).
Then add the grilled chicken into the mix and simmer for 10 more minutes.
Garnish with fresh cilantro and a little plain yogurt or sour cream.
Serve over hot rice.
