We’ve somehow ended up with a whole bunch of extra ripe bananas over the last few weeks.

I just keep buying them and I guess no one’s in the mood to actually eat them.

So I’ve been looking up ways to use them.

I found a pancake recipe that I modified to add my favorite ingredients.

These puppies passed the test of my family so here you go:

(I doubled this for our family.)

1 cup flour

1 tbs. sugar

2 tsp. baking powder

1/4 tsp. salt

1 egg

1 cup milk

2 tbs. canola oil

2 ripe bananas (mashed)

1/2 cup oatmeal (I like to use old fashioned…makes it more chunky)

shredded coconut (1/2 c. added to the mix or sprinkle some on the first side while cooking…I sprinkled)

Mix all together (batter will be a little lumpy) and cook on a hot griddle.
